Large chunks - sweetness is strong at first but dissipates as it is chewed
diced- not as sweet; initially feels "wetter"
minced - drier than diced; sweetness is nearly gone
shredded - sweeter again and is generally crunchier
juiced - very sweet & creamy/the flavor lingers longer

fat-free - thin and flavor dissipates quickly; slightly filmy
2% - thicker and chalkier/ coating is thicker
whole - thicker/heavier, more flavor and coating but not necessarily heavier
half/half- heavy flavor and coating/much body
drinkable yogurt - sour and very thick / flavor coats and lingers
whipping cream - heavy and chalky, sweet, thick coating
coconut milk - sweet and chalky but lighter
Umami
has a powdery sensation; "cloudy", "stormy" and a bit salty
Fat & Acid
2:1 - sour/ flavor dissipates quickly
1:1 - sweeter and bitterness of greens come through; longer lasting flavor
1:2 -sweet and bitter lingers longer
Sweet & Sour
simple syrup/water - is sweet. watery.
+1tbsp lemon juice- strongly brings out the sweetness of the syrup
lemon juice + 1tbsp simple syrup- "shocking" flavor with sweetness aloft
Salty & Sour
with lemon the salt is greatly enhanced
with salt the lemon diminishes
salt does diminish when greatly concentrated and acidity is introduced
Sweet & Salty
sugar diminishes the salty flavor of tomato
salt bring out the sweetness in caramel
Bitter & Salty
salt diminished the sweetness
tasted eggy

smoked sea salt- light flavor, thin
celtic - heavier body/ more intense
kala - eggy / sulfuric
seasalt - lighter/heartier body
Hawaiian - smooth / unobtrusive
Hawaiian black - much heavier but still smooth
kosher - salt I eat most often; is salty flavored salt
Himalayan - very salty and granular
Redmond - thinner flavor
Bittersweet
33% very sweet and the milk chocolate melts easily in mouth
41% less sweet but still melty; a hint of cacao
59% breaks & fractures more than melts; less sweet
60% harder and more bitter
72% increased bitterness and hardness
86% mostly bitter and even harder, "awakens" my senses; my favorite
